These delicious and nutritious pastries make a great
snack or lunch, or combined with fresh veggies, a
great main meal too. Loved even by kids who think
they don't like eggs - as long as you don't tell them
what they are!

Makes 8
Preparation time - 15 mins
Cooking time - 15 mins

Ingredients

6 eggs
2 tablespoons milk
chopped chives
2 sheets puff pastry
1/4 onion finely chopped
poppy seeds
butter or margarine
salt and pepper to taste
Method

Whisk eggs, milk, salt and pepper. Add chives.
Lightly saute the onion in a frypan until clear.
Add the egg mixture and stir while cooking to achieve a 'scrambled egg' consistency.
Remove from heat.
Cut the pastry sheets into 1/4's and divide the mixture evenly into the middle of each
square.
Fold two diagonal edges into the centre and join for each square.
Brush lightly with water and sprinkle poppy seeds over the top.
Bake on a tray at 220 degrees C until brown (approx 15 minutes).
Serve straight away.
