A firm favourite in our household is this creamy
carbonara. Full of flavour and easy to make. It
doesn't get any better than this.

Serves 4-6
Preparation time 10 mins
Cooking time 10 mins
Ingredients

400 gms Fettuccine - home made is best
Prosciutto - 100 gms
Minced or fresh crushed garlic
2 spring onions / shallots
1 egg
1/2 Cup (125mls) Cream
Parmesan cheese
Salt and pepper to taste
Olive oil


Method

Cook the pasta as per the directions on the packet, drain and set aside. Home made should
take approx. 30 seconds in boiling water.
Slice the prosciutto into small pieces and cook them in a saucepan with the garlic, shallots
and a little olive oil.
Remove from heat and add the pasta and stir through.
Add the egg and cream
(the more you add the creamier the taste, but too much will turn out too runny),
stir through well and return to a low heat.
Add salt and pepper to taste and some grated parmesan cheese to thicken the sauce.
Once the sauce thickens, remove from the heat and serve immediately. Top with grated
parmesan to finish.
